Timeless Italian recipes

A stunning panoramic view of the Nichupte Lagoon and a terrace for sunset watching, soft lighting, attentive service and irresistible recipes set the scene for an evening of fine dining at Miamare.
Wafer-thin slices of beef carpaccio followed by a caprese salad with fresh pesto and dots of olive, tomato and creamy pesto sauce to enhance the fresh flavors and a creamy asparagus soup topped with a melting gorgonzola crouton that is the perfect pairing are three delightful starters. Yet there are many more appetizers on the menu, from bruschetta to fragola salad, bresaola and Grana Padano salad and minestrone soup.
The pasta selection includes classic pasta amatriciana, pappardelle carbonara, lasagna and seafood ravioli. Wild mushroom risotto or artichoke and prosciutto risotto are also a tasty option.
Flavorful dorado a la piccata will delight seafood fans. Other traditional main course dishes are bistecca di manzo, pork saltimbocca, filete a la fiorentina and chicken cacciatore.
Royal Uno guests can also order a gourmet pizza from the wood-fired oven with toppings pairing cheese and prosciutto, smoked salmon with dill, capers, mozzarella and goat cheese and Gorgonzola and pear steeped in merlot.
A heavenly dessert, coffee and an amaretto or limoncello are the perfect finale for an evening in Miamare. The tempting selection includes tiramisu, panna cotta, torta calda or molten chocolate cake, cannoli and a selection of seasonal gelati.

A journey to the east

Tempting flavors and exotic fragrances await diners in Aora, a captivating setting for a journey to Asia’s timeless places.
The a la carte menu showcases dishes from Japan, China, Thailand and India. To begin your meal there is a sushi bar that will delight sushi fans and a variety of warm appetizers ranging from samosas and spring rolls to robata or Japanese fireside cooking: a grilling technique for beef, pork, chicken, shrimp, salmon and vegetables. Order a soup or a salad full of vibrant Thai flavors.
The selection of main courses allows diners to indulge their craving for Indian dishes such as lamb rogan josh, chicken tikka masala and fish korma with warm naan bread and rice. Wok dishes from China and Japan include teriyaki beef, yaki udon and sweet and sour pork. From Thailand, there are Chiangmai -style ribs barbecued in tamarind sauce with grilled vegetables, dried chili and coriander sauce, Phanaeng shrimp in Thai red curry sauce and classic Pad Thai with a choice of beef, chicken or shrimp.
Save space for the desserts, full of delicate flavors and a hint of ginger, lemongrass or sake, they include a matcha cake with white chocolate and fruits of the forest, chocolate and cardamom cake and lychee ice cream.
The Teppanyaki show cooking experience always draws diners and Aora has special tables where guests can watch the talented chefs show off their knife skills as they prepare this popular dish. The teppanyaki evening also includes a maki and uramaki tasting, sunomono salad and miso soup, your choice of teppanyaki with vegetables and rice and a dessert.
Miamare and Aora are open daily at Royal Uno All Inclusive Resort & Spa from 6 p.m. to
